Inside, Brasseriet is a modern restaurant where you can enjoy seasonal small and medium-sized dishes. The restaurant features several open kitchens to enhance interaction between the chefs and guests, as well as two Chambre Séparées for private dining. In the restaurant, chefs operate a Japanese Robatagrill, where they prepare exciting dishes like whole roasted Lofoten lamb, cod, salmon, and veal over flames. The restaurant also has a specially designed Josper grill, a charcoal-fired, enclosed grill oven from Spain. The chefs closely collaborate with local suppliers and choose only the finest quality ingredients. Sustainability and locally sourced food are very important and the hotel has its own rooftop garden.

Thon Hotel Svolvær has created its own filleting room/fish processing facility. Where you'll have the opportunity to fish your own fish, and learn how to fillet the day's catch in the filleting room. The fish can either be vacuum-packed, frozen, and taken home, or you can participate in a cooking course and prepare your own fish.

At the very end of the quay, you'll find a floating dock with a large and beautiful sauna: Lyst Lofoten Sauna Svolvær. The sauna boasts a unique location with views over the main entrance to the city, and a beautiful seascape as far as the eye can see. Equipped with a shower and changing room, its own access to a diving board and stairs down into the water, you're free to cool off whenever you wish.
