Day 1 - Zafra
On arrival at Seville airport collect your hire car and self drive (142km /c.1 hour 30 minutes) to the Parador in Zafra. This 15th century castle, once the residence of the Dukes of Feria, is now a 4-star hotel with beautiful ceilings, antique furniture, intricate ironwork and large, elegant guest rooms.

Day 2 - Day at leisure
Zafra is a captivating town to explore - known locally as ‘Little Seville’ (La Sevilla Chica). Its main feature is the castle, formerly a Moorish fortress that now serves as the Parador. This fortified town has eight entrances of which Jerez Gate is by far the most attractive. It leads onto Clavel Street, a narrow thoroughfare bordered by decorative tiles and pretty flowers adorning overhanging balconies.

Day 3 - Cáceres
After breakfast, drive to Cáceres (137km /c.1 hour 20 minutes) via Mérida. Founded by the Romans in the 1st century B.C, Mérida is rich in Roman architecture from the still-used Romano Theatre and Roman Bridge spanning 792m across the Guadiana River to the chariot racing Circus Maximus and the largest Roman Art Museum in Europe outside Rome.

Day 4 - Day at leisure
Explore the impressive UNESCO World Heritage Site of Cáceres. The city has been shaped over the centuries by Roman, Arab, Jewish and Christian rule which have all left their mark. Walk through the labyrinth of streets and squares with its many ancient arches and towers, Arabic walls and medieval fortified houses. The town is particularly atmospheric at night.

Day 5 - Guadalupe
Today, depart for the Parador de Guadalupe (128km /c.1 hour 50 minutes) with a stop en route at Trujillo - one of the most fascinating medieval towns in Spain. On top of a hill overlooking the centre of Trujillo is a fortress which affords fabulous views over the town and surrounding area. There is a small, fascinating museum - the Casa Museo de Pizarro (his former home), which highlights the life and times of the conquistador Francisco Pizarro, who conquered the Inca Empire. He also has an equestrian statue dedicated to him in Plaza Mayor.

Day 6 - Day at leisure
Take a walk through this historic village with its cobbled streets, traditional houses and most famous monument - the Royal Monastery of Santa María de Guadalupe which has been declared a UNESCO World Heritage Site. Alternatively, you can explore the nearby mountain towns within the region of Las Villuercas such as Cañamero, Logrosán and Berzocana.

Day 7 - Plasencia
After breakfast, drive to your final destination, Plasencia. The Parador offers the perfect location from which to explore the ancient city and its beautiful surrounding landscapes. The city centre, declared a Cultural Heritage Site, has a wealth of historic buildings, palaces, cathedrals, an aqueduct, medieval walls and fortified towers and gates.

Day 8 - Day at leisure
Visit the Sierra de Gata Mountains and Jerte River Valley. Here you will see gushing waterfalls, nature trails, pretty historic towns and taste the local delicacies such as the delicious Ibérico ham and exquisite Torta del Casar cheese. If you visit the Jerte valley in spring you will also see the cherry trees in blossom. The valley is ablaze with white petals which only happens for a couple of weeks towards the end of March and the beginning of April - subject to weather conditions.

Day 9 - Salamanca
After breakfast, drive 1-hour and 20-minutes (140 km) to Hacienda Zorita Wine Hotel and Spa in Valverdon on the outskirts of Salamanca, Spain.
Dating back to the 14th century, this luxury hotel is set on the banks of the River Tormes and is surrounded by a verdant landscape to which there are panoramic views from the hotel. The restoration of the property has been meticulous and its original charm and character has been preserved. In the evening you can either dine at the hotel’s gourmet restaurant which serves contemporary Spanish cuisine using locally sourced ingredients and accompanied by the hacienda’s own wines or if you prefer more casual dining there is the bar and terrace which overlooks the river.

Day 10 & 11 - Days at leisure
You could not be in a more convenient base from which to visit (15 min - 8 miles) one of Spain’s most beautiful cities - Salamanca. Situated in the south-west corner of Castile and Leon and on the borders of Portugal and Extremadura, the city, with a population of close to 150,000, is built on several rolling hills by the River Tormes. The old city was declared a UNESCO World Heritage Site in 1988. This is a vibrant city blessed with stunning architecture and one of the most important universities in Spain. It attracts thousands of international students. Founded in 1218, it is the oldest university in Spain, the third oldest in Western Europe and is housed in beautiful buildings.
Salamanca is magnificent. Make an early start on your visit because this will be a very full day and you will certainly need your second day to relax in the gardens and spa of the Hacienda!

Day 12 - San Bernando
The drive from the Hacienda to the five star Castilla Termal Valbuena, one of our favourite hotels, will take approximately 2 hours.
In the evening you have a choice of dinner in either the ‘Coverso’ a la carte restaurant or the Bodega de los Monjes cafeteria with terrace.

Day 13 & 14 -
These last two days should be spent relaxing in one of the most majestic of hotels (with a wonderful spa), set in a 12th century Cistercian monastery amidst the wonderful scenery bordering the Duro river. Hiking and cycling trails surround the hotel and bicycles are provided free. There are excursions to wineries and wine tasting at the hotel.

Day 15 - Day of departure
If you have booked a late afternoon return flight, then make the most of your last day before making your way to Madrid Airport for your return flight.
