Of course, the spa element forms only one part of a stay in these properties which have been lovingly restored and are the perfect base from which to visit beautiful countryside and ancient towns and villages.
Vineyards are everywhere around the 5-star Castilla Termal Monasterio De Valbuena and wine is the subject and purpose of this region, 31 miles from Valladolid, the so-called ‘Golden Mile’ of the River Douro (Ribera del Duero). In fact, the hotel has 11 acres of its own vineyard. In the hotel’s ‘Converso’ restaurant, you can sample the best wines of the region and delight in the fusion of traditional and modern cuisine from its own organic vegetable and spice garden. In fact, gastronomy plays an important part in staying at the hotel as the ‘La Cilla’ Cafeteria and ‘La Bodega de Los Monjes' also offer the best in wines and interesting light menus.
The Castilla Termal Burgo de Osma is built above the majestic building of the 16th century Renaissance University of Santa Catalina, conserving its magnificent Plateresque entrance, patio and Renaissance cloister, with two different styles of arch below an enormous glass dome. The medicinal waters emanate from beneath the ancient university itself.
The Castilla Termal Olmedo is a 4-star hotel and is built on the ruins of the ancient Sancti Spiritus Convent dating from the 12th century in the small Mudejar town of Olmedo, a 45-minute drive from Valladolid, 2 hours from the Castilla Termal Burgo de Osma and 1 hour and 30 minutes from Madrid Airport. A legendary spring has been found beneath the subsoil of the property which now feeds the extensive and sophisticated spa and large thermal pool.

Day 1 - Day of arrival - Castilla Termal Monasterio De Valbuena
It is best to take as early a flight as possible to Madrid. Our guide price includes Gatwick flights but other UK departure airports can be substituted. On arrival in Madrid, collect your car for the two-hour drive to the Castilla Termal Monasterio De Valbuena.
You have unlimited access to the recreational pools, both indoor and outdoor, of mineral-medicinal thermal water, so why not make use of the pools and relax after your flight and drive to the hotel.
Included is a complete relaxation treatment by Clarins (Ribera de Duero Ritual) which can be taken on your first day or by arrangement with the hotel on any one of your three-day stays.
A wine tasting session in one of the oldest rooms of the monastery is also included and perhaps follow this with the Dinner Tasting Menu (included, but wine is extra) by Miguel Angel de la Cruz, a truly sensory experience of the unique local flavours, prepared by this renowned naturalist chef.

Day 2 - Pago de Carraovejas winery
After breakfast, unless you are unable to cycle and need to take the car, explore the vine covered countryside around the hotel by bike and discover the Ribera del Duero’s (River Douro) Golden Mile, within which the hotel is set, with views stretching across the river and vineyards. The hotel provides details of hiking and cycle paths
A visit is included to the Pago de Carraovejas winery where you can experience the winemaking process from start to finish and enjoy sampling five wines from their range. This does not include lunch but there are little gastronomic snacks included which are prepared by their Michelin starred Ambivium restaurant. The winery is a 20-minute drive from the hotel and the hotel can arrange a taxi if you do not want to drive.
The hotel also includes a guided visit to its organic kitchen garden which reflects the origins of the estate, when Cistercian monks inhabited the monastery and were pioneers of the Ribera del Duero wine growing region.
Dinner is not included but there is a choice of the ‘Coverso’ a la carte restaurant, the ‘La Cilla’ cafeteria with terrace and ‘La Bodega de los Monjes’ with its menu of light dishes.

Day 3 - Cycle and spa
The ‘Las Edades del Hombre’ foundation is headquartered at the monastery. The foundation restores paintings and sculptures of great historical importance. Guests have a unique opportunity to learn about the whole restoration process directly from the experts involved in this delicate work.
A visit and picnic at another winery are included using E-bikes (cycling made easy). This visit is to the Finca Villacreces winery which is set in the midst of a two-hundred-year-old pine forest. The Finca is a 20-minute cycle ride from the hotel.
And on your final day you have exclusive 90-minute access to the thermal contrast health circuit with its hot and cold pools and saunas set within the historical architecture of the monastery in the Chapel of San Pedro. This experience can be booked on a different day and time with prior arrangement with the hotel. More than one visit can be booked at a supplement.

Day 4 - Castilla Termal Burgo de Osma
It will take approximately one hour and 15 minutes (115 km) to drive from the Monasterio de Valbuena to the Burgo de Osma. Make an early start to give you time to explore Burgo de Osma.
The town is essentially a walled medieval town and gastronomic centre. The well-known products of the area include vegetables, crabs, baked lamb, stews and, of course, mushrooms of which there are in the region of 700 species in the area of nearby (56 km) Storia. All can be sampled in the hotel’s ‘’Argaela’ restaurant and cafe.
After exploring the historic centre of Burgo de Osma, time to relax in the mineral-medicinal water of the indoor and outdoor pools at the hotel.
In the evening, a tasting menu dinner is included within the space of the Renaissance courtyard. Traditional dishes based on the cuisine of Soria but with a contemporary twist are the specialty. The menu is accompanied by D.O. Ribera del Duero wines (wines from the River Douro area).

Day 5 - Vineyards and spa
After breakfast visit the nature reserve of the canyon of the Lobos River. Here you will also find the mysterious Knights Templar hermitage of San Bartolome and, if lucky, catch sight of the protected colony of griffon vultures.
A guided tour of the vineyards and wine cellar of the Dominio de Atauta winery is included followed by a wine tasting and gourmet sampling of Manchego cheeses from the well-known dairy Queseria 1605.
In the afternoon time to relax in the contrast hot and cold pools within the stunning 11th century Mozarabic hermitage.
If you still feel like having dinner in the evening then the hotel reception can recommend some very good local restaurants which would appreciate your support!

Day 6 - Castilla Termal Olmedo
After breakfast make an early start on your way to the Termal Olmedo with a quick visit to the historic towns of Calatanazor (29 km) and Soria (56 km).
The hotel is set in a land of pine groves (Tierra de Pinares) and as well as the cycle and walking routes on offer, the hotel can organise a pine nut experience to introduce you to this fascinating industry.
Included on your first day is a Mudejar Massage, a specialty of the spa. Of course, you have unlimited access to the thermal pool. The Mudejar massage can be booked on your second day with the prior arrangement of the hotel.
In the evening, a tasting menu at the hotel’s Hontanar Restaurant is included with dishes using the local produce of the area. Wine is payable locally.

Day 7 - Vineyards and spa
This is a well-known wine making district and here too there is a visit to the De Alberto white wine winery. The passages of its underground cellar hide the secrets of one of the oldest families in the town of Serrada and are part of its history.
Bicycles are also available at the hotel which can also provide information on cycle routes.
The contrasts circuit rooms booked on this day are decorated with Castilian Mudejar art which has been inspired by the Royal Convent of Santa Clara in Tordesillas.
You will already have eaten at the Hontanar Restaurant and you could not go wrong if you decided to re-visit. However, the hotel can recommend several good restaurants which are easily accessible.

Day 8 - Day of departure
Fine countryside, three stunning hotels and three beautiful spas should satisfy most and we promise this will have been quite an experience. If your flight is booked in the evening allow one hour and thirty minutes to reach Madrid Airport, so time enough for a further morning swim in the thermal pool before leaving the hotel.
